- Prepare 2 of egg yolks PLUS 2 whole eggs.
- It's 1 of lime or more if you like tangy (I LOVE tangy).
- It's 1 dash of water, or more if sauce gets lumpy.
- It's 1 dash of sea salt.
- You need 1/2 stick of butter.
- You need 1 of English muffin (toasted or at least warm).
- You need 1/2 of avocado.

- Grab a little pan, put a random amount of water on to boil & cover it with a small frying pan..
- Once water boiling, Cut butter into chunks &ads to frying pan.
- In a separate bowl mix sea salt juice of lime (s) water & both egg yolks.
- Cut up half an avocado into pretty slices, I personally add as midge sea salt & lime to the avocado too, whatever blows your skirt up, lol!.
- Once butter starts to melt, slowly add yolk mixture, whisking steadily. It will start out looking gross &runny, KEEP WHISKING & soon it turn bright yellow &thicken, yum. If it gets lumpy or curdly, add a few more drops water. Remove from heat.
- Quickly crack & drop both whole eggs into boiling water &turn off heat.
- Place avocado slices onto English muffins, &with slotted spoon remove whole eggs from water, I like mine runny. Leave'em in water longer if you don't like runny eggs.
- Cover this with your lovely bright yellow awesome hollandaise sauce & PIG OUT! Optional to garnish with a tiny bit of paprika, just for bling!.
