As a non-vegan, I am learning new things about being a vegan all the time. Just last week, I learned that Parmesan cheese isn't a vegetarian cheese since it's made with animal-produced enzymes. This never would have occurred to me, but I'm so glad to learn it because it helped me develop this new Vegan Spinach Pesto. The steps are simple: saute the garlic, simmer the veg stock and pasta, stir in the cream cheese and seasoning, then fold in the spinach.

- For spinach sauce: in a blender or food processor add spinach, cream cheese, garlic, almond milk,Parmesan cheese and blend until smooth and creamy.
- Cook pasta as per box instructions.
- In a sauce pan add olive oil, bell peppers, onion,mushroom until tender then add ground beef and cook on low heat for 3 mins. Stir occasionally.
- Add handful of spinach, pasta to the sauce pan then spinach sauce. If sauce too thick add a lil more almond milk as desired. Season with salt pepper, oregano, parsley. Stir and cover n let simmer for 5mins and low heat. Serve and enjoy.
Top with vegan parmesan or nutritional yeast if you want. To make this recipe gluten-free, simply substitute the penne with your favorite GF pasta. Vegan spinach pasta sauce with basil and garlic. I added a handful of basil to this recipe because I love the flavor of basil and furthermore basil is considered one of the healthiest herbs. Of course, I also added garlic to this creamy vegan spinach pasta sauce since garlic makes all savory dishes even more delicious in my opinion.
